Lower Guilt Oatmeal Raisin Chewwwy Cookies (No Fancy Ingredients Needed)

It’s difficult to manage my sweet tooth while I am trying to cut down on calories.  One of my newest things is to substitute half or more butter a dessert recipe calls for with applesauce.  I’ve made this very popular recipe Oatmeal Raisin Cookies I (from allrecipes.com), but this time I made my own substitutions.

Rather than use the 3/4 cup of butter, I substituted 1/2 cup of applesauce and only put 1/4 cup of butter.  I cut down the white sugar to 1/2 cup, and since I didn’t have vanilla extract I substituted with cognac.  Lastly, I only baked the cookies for 8 minutes.

The cookies are soooooo chewy.  They looked a little undercooked when I took them out, but they hardened as they cooled.  If I want them crispier, next time I will cook them for 9-10 minutes.  I definitely prefer chewy though!  🙂
