I had lots of random small amounts of leftover vegetables, cheeses, and meats. Originally, I didn’t plan to cook dinner, but duty called.
I made an asparagus and pecorino cheese quiche. It was super simple. Sauté the asparagus in olive oil on medium for a few minutes. In a large bowl, whisk together 6 eggs and whatever grated cheese you have around. Throw everything together in the pie pan and cook for 30 minutes on 375 degrees.
Next, I made a pea and bacon dish. Chop one whole onion, cut a few strips of bacon, and brown both ingredients together in a skillet. I then added a box of frozen peas I had hanging out in the freezer. Cook the peas with the bacon and onions until they’re hot.
Finally, I heated up other leftover items I had like mashed potatoes, serve, and voila! When it’s so cold that you don’t want to go to the grocery store, you have to work with the items you have on hand.
