I love hearty chunky soups. And I especially love things that you can make all in one pot. This is a potato chowder with mixed vegetables.
I put a little butter in the bottom of the pot, diced an entire onion, poured a whole bag of mixed frozen veggies (corn, carrots, green beans, lima beans), cut up potatoes, and then poured enough water to cover everything. I don’t buy chicken/vegetable/beef stocks because they’re loaded with sodium. So instead, I added salt, pepper, celery seed, and thyme to the pot. While I waited for everything get to a boil, in a sauce pan I melted a half stick of butter, one cup of milk, a can of evaporated milk that I had, and a few spoonfuls of all purpose flour. I also put in fresh parsley that I just broke apart with my fingers, rather than using a knife. After the soup pot came to a boil, I reduced the temperature and added the milk mixture to it, and just let it simmer for 15 minutes or so.
This soup is so delicious and it’s so filling. I was also able to use all different ingredients that I had. Many of the recipes for chowder called for celery but I didn’t have any on hand. I will definitely be experimenting more and making permutations of this chowder. Warm, hearty, and delicious soup 😀
