I’m continuing my efforts to eat healthy side dishes. Mangos were 2 for $3 at one of the grocery stores, so I decided to put a spin on something I previously made. A couple months ago, I made steaks with mango salsa — delicious. Tonight I made bun-less juicy meatball burgers topped with melted skim mozzarella. As the side dish, I made fresh mango salad. Mangos, tons of fresh cilantro, diced red onions, olive oil, salt, black pepper, and a fresh squeezed lime (they were 4 for $1 this week!) Our dinner guest was a HUGE fan, he loved it!
